Gai Tom Ka and my love of Thai food

It is no secret around here that I love Thai food. It comes through in a great deal of my cooking. However, living in central Vermont, there are not a lot of Thai food options OR ingredients. We make do with what we got. Period. 

Fried Rice

This is one of the recipes in my “No Recipe Recipe” series. I just take some things and throw them together for an easy meal. You get the idea…. Start with this. Scramble the eggs and set aside. Saute the vegetables (or keep some raw) 

Anyone Else?

I just wanted to share this photo (taken on my iphone). This is how I regularly find our local “megamart” grocery store. Where is all the “food” (these days I use that term loosely)? Not only is the quality of food a huge disappointment, but the selection and amount as well. Boo.

Every year I put together these little Valentines Day Dinner Boxes. Orders come in from all over the country and on that special day, I drive around and surprise people with them. It is such fun, one of my favorite days of the year to 

Vermont Sausage Lentil Soup

Vermont Sausage Lentil Soup

This recipe is SO simple, you can’t not make it. Here goes…

Brown a pound or two of VT sausages (I like Sweet Italian) in  heavy bottom dutch oven.

Add this stuff… (vegetables, onions, garlic, lentils) along with a big pinch of salt and cover with stock or water.

Cover, bring to a boil and simmer over medium low heat until lentils burst and thicken liquid.

Add liquid during simmering if necessary to keep ingredients just covered.

Adjust salt and finish with fresh herbs and a splash of good vinegar.

Serve with cheese to sprinkle on top (any kind really) and crusty bread with butter. Enjoy with the local hooligans.

Daddy-O’s Birthday French Macarons

Daddy-O’s Birthday French Macarons Yield +\- 36 macarons (Loosely adjusted from Martha Stewarts version: http://www.marthastewart.com/318387/french-macaroons) 1 1/4 cup confectioners’ sugar 3/4 cup almond meal 2 large egg whites, room temperature 1 vanilla bean (optional, kind of)   Pulse 1 cup of the confectioners sugar and 

Artichoke and Sunchoke Soup

Lazy Sunday family supper… 2 cans artichoke hearts, drained with liquid reserved, 1 can left whole, once can rough chopped 3 pounds sunchokes, scrubbed, peeled with a vegetable peeler and cut into 1-2 inch pieces 1 pound red potatoes, scrubbed, peeled with a vegetable peeler 

Golumpki and thinking of Bopchi

IMG_2917 The easiest way to make Golumpki is by memory with your Bopchi close to your heart. My grandmother used to make these for me as a kid. This afternoon I took some time to construct the recipe from a memory of my childhood taste, warm cup of tea nearby. I browned some ground pork, added in some onions and cooked them until they were tender with a clove of garlic and a pinch of oregano. Then I added cooked rice and fresh pepper.

 

 

 

 

 

 

IMG_2919 I rolled the pork and rice mixture up in large leaves of Savoy cabbage and thought about her.

 

 

 

 

 

IMG_2921 I topped the rolls with canned tomato soup (the same color as the lipstick she wore) and braised them in a 350*F oven for an hour. Once cooked, top with a pat of butter and more fresh pepper. Miss you.
